Aunt Greta’s World Famous Peanut Butter Cake

Ingredients
1 yellow cake mix
1/3 cup brown sugar
1 cup peanut butter
1 cup water
¼ cup canola or olive oil
3 eggs
1/2 cup chopped peanuts
1 cup chocolate chips

Directions

  1. Heat oven to 350 degrees F. Spray and flour a 9 x 13 cake pan.
  2. Combine the yellow cake mix, brown sugar, and peanut butter in a large bowl. Beat on low speed with a mixer. Mix until crumbly.
  3. Reserve 2/3 cup of this mixture in a small bowl.
  4. Add remaining ingredients to the cake mix. Mix for 2 minutes with the hand mixer – until smooth and well incorporated.
  5. Pour cake batter into the prepared pan.
  6. Add chopped peanuts and chocolate chips to the reserved topping mixture and stir. Sprinkle the topping on the cake. Note: add extra chocolate chips if necessary.
  7. Bake 30-35 minutes. Test with a cake tester – the cake is done when the tester comes out clean.

My mom made this cake when I was growing up, because it was so quick and easy. I started making it when I went away to college, and then I started making it for work parties and events – and I’ve never stopped. My most memorable episode with this cake: Catching my boss eating the cake directly out of the pan in his office.
