Lemon Bars
Ingredients
For base:
- 1 cup soften butter
- 2 cups flour
- 1/2 cup sugar
For top:
- 1 1/2 cups sugar
- 1/4 cup flour
- 4 eggs
- Juice from two lemons, approx. 2 full tablespoons
- Lemon zest, if desired
Directions:
- Blend all ingredients for the base and press into the bottom of an un-greased 13×9 pan
- Bake for 15-20 minutes or until golden brown
- Whisk together sugar and flour for top
- Whisk in eggs and lemon juice
- Pour over baked crust
- Bake for an additional 20 minutes. The bars will firm up as they cool
- Once cooled, cut into squares and dust with powdered sugar
