Lemon Bars

Ingredients

For base:

  • 1 cup soften butter
  • 2 cups flour
  • 1/2 cup sugar

For top:

  • 1 1/2 cups sugar
  • 1/4 cup flour
  • 4 eggs
  • Juice from two lemons, approx. 2 full tablespoons
  • Lemon zest, if desired

Directions:

  1. Blend all ingredients for the base and press into the bottom of an un-greased 13×9 pan
  2. Bake for 15-20 minutes or until golden brown
  3. Whisk together sugar and flour for top
  4. Whisk in eggs and lemon juice
  5. Pour over baked crust
  6. Bake for an additional 20 minutes. The bars will firm up as they cool
  7. Once cooled, cut into squares and dust with powdered sugar

Notes from submitter:

Lemon zest can be added to the top layer for additional flavor and texture before baking
