Tortellini with Red Sauce

Ingredients

  • 1 pkg. of Refrigerated Tortellini (We use the Spinach & Cheese from ALDI)
  • 1 can (14 ounces) of crushed tomatoes
  • 1 cup of chicken broth
  • 1 TBSP minced garlic
  • 8 Leaves of fresh basil
  • 1 bag of baby spinach
  • Salt & Pepper to taste
  • 2 tsp Dried oregano leaves
  • 2 TBSP heavy cream (optional)
  • 12-16 ounces of Italian Sausage (optional)

Instructions

If making with the Italian Sausage, cook the sausage over medium heat until browned and cooked through thoroughly. As the meat is cooking, break up into small chunks. Drain the pan if too much grease and continue with the steps below:

  1. Add the entire can of tomatoes and the chicken broth to a pan (with a lid) over medium heat;
  2. Stir in garlic, oregano leaves, basil (chopped), salt and pepper;
  3. Bring to a slight boil, add in the package of tortellini, cover and turn heat to medium-low;
  4. After 3-5 minutes, stir in optional heavy cream and baby spinach; cover and let cook for another 2 minutes;
  5. Stir and serve immediately
