Cake Mix Cookie Sandwiches

Ingredients
For cookies:
- 1 pkg boxed cake mix of choice
- 2 eggs
- 1/3 cup oil
For after baking:
- 1 container frosting of choice
Directions
- Preheat oven to 375ºF.
- In large mixing bowl, mix all cookie ingredients together well.
- Drop evenly sized spoonfuls onto pan.
- Bake for 6-8 minutes (may take longer if spoonfuls are larger – just keep an eye on them).
- After cooling, spread layer of frosting on bottom of one cookie and sandwich with the bottom of another, creating a cookie sandwich.
Notes from the submitter:
I’ve made these multiple times for bench snacks (shoutout to Bench 11). You can add extra ingredients to the mix if you’re feeling fancy – for example, I’ve added chocolate chips to chocolate cake mix.
